All in one pan breakfast


Ingredients: onions (50g), bell pepper (90g), turkey breast (100g), Tomatoes cherry (75g), olive oil (5g), eggs (2), Egg whites (50g)

Add chopped onions to 5g of Olive Oil and fry a little bit, if you see that you have not enough oil to fry, just add a bit of water. Add bell peppers in few minutes, turkey and then tomatoes. Do not over cook veggies, they should save the color. Crack 2 eggs on top and add 50 g of egg whites. Season with light salt and black pepper. Cook til eggs are done to your liking and scatter with chopped parsley or cilantro. Remove from heat. Nutrition: per whole portion Fats 16g carbs 13g protein 45g kcal 379.

Baked Parmesan Zucchini Sticks


Ingrediets: 3 medium zuchinnis, cut in sticks, 1 cup Panko breadcrumbs, 1/2 cup Parmesan cheese, 1 egg

preheat oven to 425 F degrees. Prepare a baking sheet with parchment paper. 

I used 3 medium zucchini which i cut in half, then cut each half in half legnth wise, then each quarter in half again ending up with 8 sticks. Beat the egg in a shallow plate. Season the egg with light salt and pepper. Dip each zucchini stick in the egg wash, then roll through the breadcrumb mixture, making sure each stick is fully covered with the breadcrumbs. Bake for about 20 minutes or until golden brown and crispy. Serve with light ranch or marinara sauce. Nutrition: Serving size: 3 sticks calories: 78 fat:2.2g Carbs:10g Protein:5g
